Caramelized Chinese Yam

Material
200 grams Chinese yam
1 egg
Flour 10 g
Starch 50 g
Seasoning
Oil 500 g

5 tablespoons sugar
Method
1 Peel and cut Chinese yam into pieces; Soak in water then drain; Pat on a little starch; Beat the egg in bowl, add the flour, dry starch, a little water, a little oil mix into a batter, add the yam coat evenly;
2 Heat oil in pan, add yams, fry until golden crisp hard when picked up and drain;
3 Wash the pan, add water, sugar, low heat and stir until golden and starting to bubble, add the fried yams, stir well, pour into a good wipe the oil tray, accompanied by a bowl of cold water to serve.
